Pound garlic and chilies in a mortar to a rough paste (or finely chop).

Heat oil in a wok over high heat. Add garlic-chili paste and stir-fry 20 seconds.

Add chicken and stir-fry until cooked through, breaking it up, about 4 minutes.

Add fish sauce, oyster sauce, soy and sugar. Toss to coat.
