One tray, maximum flavour. Juicy lemon chicken with roasted peppers, zucchini and potatoes.

Preheat oven to 220°C (425°F).

Toss potatoes with 1 tbsp oil, salt and pepper on a large sheet pan. Roast for 10 minutes.

Meanwhile, whisk lemon juice, zest, remaining oil, garlic, oregano, salt and pepper. Coat chicken and veggies.

Arrange chicken and remaining veggies around potatoes. Roast until chicken reads 74°C (165°F) internally, 20–25 minutes.

Rest 5 minutes and serve straight from the pan.
